    Raw oysters on the half-shell with sauce
    mignonette and coarse sea salt

    Saint-Jacques au Cidre
    Fresh scallop and bay shrimp in a cider
    broth thickened with pain de mie and
    finished with fresh herbs

    Duo de Veau et Sole
    Tender veal medallion with asparagus
    and white wine mushroom cream sauce
    & fresh Dover Sole with crisp lardons,
    pomme de terre tournee persille and
    a lemon-caper beurre blanc

    Tarte Tatin
    Classic preparation.  Caramelized apples
    with Calvados in a hand-made pate sucree
    tart dough and finished with cinnamon
    creme chantilly
